Prepped Pasta Sauce: Tomato
Keeping frozen pasta sauces in the freezer is one of the best ways to utilize the magic of meal prepping. Boil some wholegrain or gluten free pasta and throw one of these sauce packets into a pot to thaw and cook through. The first one in this series is a simple and tasty tomato sauce.
Serves: 4 containers of sauce (each container has enough sauce for 3 servings of pasta)
Container: you will need 4 airtight, freezer-friendly containers
Time: approximately 25 minutes

Ingredients:
- Olive oil
- 6 garlic cloves, finely chopped
- 2 onions, finely chopped
- 3 cans (14 oz.) chopped tomatoes
- 2 tbsp. balsamic vinegar
- 1 tsp. honey
- 1 tsp. mixed dried herbs
- Salt and pepper, to taste
Method:
- Drizzle the olive oil into a frying pan and place over a medium heat.
- Add the garlic and onions to the pan and sauté until soft.
- Add the tomatoes, balsamic vinegar, honey, herbs, and a pinch of salt and pepper, stir to combine.
- Cover the pot and leave to simmer on a low heat for 20 minutes.
- Leave the sauce to cool slightly before dividing between your 4 containers, cover, and pack into the freezer to store until needed!
- You could also use this sauce for zucchini noodles and meatballs!
