Prepped Pasta Sauce: Pesto
This sauce is not for the freezer, but for the fridge. Spoon it into a glass jar or airtight container and place a dollop onto your zoodles or wholegrain pasta next time you’re in a rush for dinner. You don’t need much of this pesto, as it has a strong and rich flavor. Ideal for people who have lots of basil growing in their herb garden!
Serves: makes enough for about 12 servings of pasta or zoodles
Container: you will need 1 glass jar with a lid, or a sealable container
Time: approximately 10 minutes

Ingredients:
- 2 cups fresh basil leaves
- 3.5 oz. parmesan cheese, broken into small chunks
- 1/3 cup olive oil
- 3 garlic cloves, roughly chopped
- ½ cup pine nuts, (they are very expensive so just use cashew nuts for’a cheaper option!)
- Salt and pepper, to taste
Method:
- Place all ingredients into a blender or small food processor and add a pinch of salt and pepper.
- Blend until smooth but still with a few small pieces of nuts remaining.
- Pour into your jar or container and store in the fridge until needed!
- You can also use this as a salad dressing for potato salads or chicken salads.
