Marinated Pork Packets

Slices of pork, marinated with simple herbs, olive oil and lemon juice. You can serve this pork with a side of fresh veggies and roasted potatoes, or in a pita bread with salad and Greek yoghurt.

Serves: 8 packets, (1 serving per packet)

Container: you will need 8 freezer-friendly, sealable bags

Time: approximately 15 minutes

Nutritional info per serving:

  • Calories: 220
  • Fat: 39 grams
  • Protein: 21 grams
  • Carbs: 2 grams

Ingredients:

  • 4 pork steaks, cut into slices
  • 2 tbsp. olive oil
  • Juice of 1 lemon
  • 1 small sprig of fresh rosemary, roughly chopped
  • 1  tsp.  dried  mixed  herbs  (use  fresh  herbs  if  you  have  them,  but  don’t worry if you don’t, dried herbs are fine)
  • 4 garlic cloves, crushed

Method:

  1. Place all ingredients into a bowl and stir to combine, making sure the pork is thoroughly coated in oil, lemon juice, garlic and herbs.
  2. Divide between your 8 freezer-safe bags, seal and stack into the freezer to store until needed.
  3. Leave to thaw before cooking in a hot frying pan.
