Marinated Pork Packets
Slices of pork, marinated with simple herbs, olive oil and lemon juice. You can serve this pork with a side of fresh veggies and roasted potatoes, or in a pita bread with salad and Greek yoghurt.
Serves: 8 packets, (1 serving per packet)
Container: you will need 8 freezer-friendly, sealable bags
Time: approximately 15 minutes

Ingredients:
- 4 pork steaks, cut into slices
- 2 tbsp. olive oil
- Juice of 1 lemon
- 1 small sprig of fresh rosemary, roughly chopped
- 1 tsp. dried mixed herbs (use fresh herbs if you have them, but don’t worry if you don’t, dried herbs are fine)
- 4 garlic cloves, crushed
Method:
- Place all ingredients into a bowl and stir to combine, making sure the pork is thoroughly coated in oil, lemon juice, garlic and herbs.
- Divide between your 8 freezer-safe bags, seal and stack into the freezer to store until needed.
- Leave to thaw before cooking in a hot frying pan.
