Taco Freezer Packets
These packets are just like the smoothie packets back in the Breakfast section, but they are for tacos! Chicken, bell peppers, onion, spices, and tomatoes all packed into sealable bags and stashed in the freezer. Simply leave them out to thaw then throw the contents into a hot fry pan to cook, then load onto a tortilla, add some guac and you’re good to go!
Serves: 8 packets (1 packet per serving)
Container: you will need 8 freezer-friendly, sealable bags

Ingredients:
- 3 large chicken breasts, cut into small slices
- 3 red bell peppers, core and seeds removed, thinly sliced
- 2 red onions, red onions, thinly sliced
- 2 cans (14 oz.) chopped tomatoes
- 6 garlic cloves, finely chopped
- 2 tsp. paprika
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. chili powder
- 2 tbsp. olive oil
Method:
- Place all ingredients into a large bowl and stir to combine, making sure every piece of chicken and vegetables is coated in olive oil and spices.
- Divide the mixture between your 8 freezer-safe sealable bags, seal and stack into the fridge to store until needed.
- Leave to thaw before sautéing in a hot frying pan until cooked all the way through and the onions and bell peppers are slightly charred.
