Coconut-Poached Fish with Peanuts and Asian Greens
White fish, lightly poached in coconut milk, sprinkled with peanuts and served on a bed of steamed bok choy. This dish might sound complex, but it’s really so simple and wholesome. For some extra energy, serve with brown rice.

Ingredients:
- 1 ½ cups (12fl oz.) coconut milk
- 1 tsp. soy sauce
- 1 tsp. fish sauce
- 1 tsp. chili flakes
- 4 white fish filets
- 2 bunches of bok choi, base removed, leaves washed
- ½ cup roasted, salted peanuts
- 1 tsp. sesame oil
Method:
- Add the coconut milk, soy sauce, fish sauce, chili flakes and fish filets into a deep fry pan or pot and place over a medium heat.
- Bring to a gentle boil and leave to simmer for about 10 minutes or until the fish is just cooked.
- Add the bok choi to the pot and place the lid onto the pot, leave for 1 minute to gently steam the bok choi.
- Divide the fish, bok choi, and coconut milk between your 4 containers and sprinkle the peanuts and sesame oil over the top, cover and place into the fridge or freezer to store until needed.
- If you like, a sprinkle of fresh chili and cilantro is a gorgeous addition before eating.
