Basil, Tomato and Haloumi Salad with Cos and Cucumber
Another recipe with basil and tomato, the combination is so tasty it should be enjoyed as often as possible. Salty haloumi cheese satisfies the palate, while lettuce and cucumber refreshes and nourishes you.

Ingredients:
- 7 oz. halloumi cheese, sliced into 12 slices
- 2 cos or Romaine lettuces, roughly chopped
- 1 cup chopped cucumber
- 3 large tomatoes, sliced
- Large handful of fresh basil, roughly chopped
- 2 tbsp. apple cider vinegar mixed with 2 tbsp. olive oil
Method:
- Heat a non-stick frying pan over a high heat.
- Add the halloumi slices to the pan and cook on both sides until golden.
- Divide the lettuce, cucumber, tomatoes, basil, and halloumi between the 4 containers.
- Sprinkle with salt and pepper and the oil/vinegar mixture, gently toss to combine and coat with dressing.
- Cover and place into the fridge to store until needed.
