White Bean and Tomato Salad with Balsamic Dressing
This salad reminds me of a sundrenched afternoon in Italy. Beans should never be overlooked, they are a dieter’s best friend, in my humble opinion. Gluten-free, filling, fibrous and can be put into many different dishes, beans are the best!
This salad utilizes white beans, fresh tomatoes, basil and balsamic vinegar.
Serves: 4
Container: you will need 4 airtight containers
Time: approximately 10 minutes
Nutritional info per serving:
- Calories: 250
- Fat: 7 grams
- Protein: 13 grams
- Carbs: 33 grams
Ingredients:
- 2 cans white beans, drained
- 3 ripe tomatoes, cut into chunks
- Small handful of fresh basil, roughly chopped
- 2 tbsp. balsamic vinegar mixed with 2 tablespoons of olive oil
- Salt and pepper, to taste
Method:
- Place the beans, tomatoes, basil, balsamic, olive oil, salt and pepper into a small bowl and mix to combine.
- Divide into your 4 containers, cover and place into the fridge to store until needed.
- Eat cold!
