White Bean and Tomato Salad with Balsamic Dressing

This salad reminds me of a sundrenched afternoon in Italy. Beans should never be overlooked, they are a dieter’s best friend, in my humble opinion. Gluten-free, filling, fibrous and can be put into many different dishes, beans are the best!
This salad utilizes white beans, fresh tomatoes, basil and balsamic vinegar.

Serves: 4

Container: you will need 4 airtight containers

Time: approximately 10 minutes

Nutritional info per serving:

  • Calories: 250
  • Fat: 7 grams
  • Protein: 13 grams
  • Carbs: 33 grams

Ingredients:

  • 2 cans white beans, drained
  • 3 ripe tomatoes, cut into chunks
  • Small handful of fresh basil, roughly chopped
  • 2 tbsp. balsamic vinegar mixed with 2 tablespoons of olive oil
  • Salt and pepper, to taste

Method:

  1. Place the beans, tomatoes, basil, balsamic, olive oil, salt and pepper into a small bowl and mix to combine.
  2. Divide into your 4 containers, cover and place into the fridge to store until needed.
  3. Eat cold!
