Prepped Topping Packs for Rice Wafers

A variety of toppings for rice wafers, neatly packed away in a container until you’re ready to DIY your rice wafers for a tasty and healthy lunch. The nutritional information includes all of the toppings plus 4 plain rice wafers. I LOVE to spread peanut butter onto rice wafers and then slice quarter of a banana over top for a savory-sweet treat.

Serves: 4

Container: you will need 4 airtight containers, preferably with separated compartments

Time: approximately 10 minutes

Nutritional info per serving:

  • Calories: 310
  • Fat: 11 grams
  • Protein: 19 grams
  • Carbs: 36 grams

Ingredients:

  • 1 cup cottage cheese
  • 4 tbsp. chopped chives
  • 1 fresh tomato, sliced
  • 4 slices of deli ham or turkey
  • 4 tbsp. peanut butter
  • 1 banana, cut into 4 chunks

(plus 4 rice wafers per lunch serving)

Method:

  1. Place the cottage cheese, chives, tomato, ham or turkey, peanut butter, and banana into a container with separated compartments.
  2. Cover and place into the fridge to store until needed.
  3. Wrap the rice wafers in sealable bags or plastic wrap, or keep them in an airtight container at work to pull out whenever you need them!
