INGREDIENTS
- 1 medium avocado
- 2 tablespoons lime juice
- 2 large eggs
- Salt and pepper
- 2 tablespoons shredded cheddar cheese
INSTRUCTIONS
- Preheat the oven to 450°F and cut the avocado in half.
- Scoop out some of the flesh from the middle of each avocado half.
- Place the avocado halves upright in a baking dish and brush with lime juice.
- Crack an egg into each and season with salt and pepper.
- Bake for 10 minutes then sprinkle with cheese.
- Let the eggs bake for another 2 to 3 minutes until the cheese is melted. Serve hot.
