Mashed Potato Stuffed Mushrooms
24 mushrooms, cleaned and stemed
4 large baking potatoes
1 8 oz. whipped cream cheese
1 cup finely chopped shrimp
1/2 stick of butter
1 tsp. salt
- Bake potatoes in microwave for 12 minutes. Let cool and scoop out the potato.
- In medium bowl combine potato, cream cheese, shrimp, butter and salt Blend well.
- Spoon mixture into mushrooms and bake for 10−15 minutes at 325.
