Freezer Chicken Soup
This soup is an extremely light meal, filled with minerals and nutrients to restore you after a binge-full weekend. Chicken, broth, corn and scallions come together to melt into a tasty and wholesome soup to make you feel nourished.
Serves: 6
Container: you will need 6 freezer-safe, airtight containers
Time: approximately 30 minutes

Ingredients:
- 5 boneless chicken thighs, cut into small pieces
- 1 onion, finely chopped
- 4 cups (32fl oz.) chicken broth
- 2 cups (16fl oz.) water
- 1 can (14 oz.) corn kernels, drained
- 2 scallions, finely sliced
- Salt and pepper, to taste
Method:
- Place all ingredients into a pot and add a pinch of salt and pepper, place over a medium heat and cover.
- Leave to simmer for approximately 30 minutes until the chicken is cooked through.
- Leave to cool slightly before dividing into your 6 containers, cover and stack into the freezer to store until needed.
- Leave the frozen containers on the bench to thaw before thoroughly reheating, or simply place the frozen soup in a pot over a high heat to speed the process up!
