Freezer Chicken Soup

This soup is an extremely light meal, filled with minerals and nutrients to restore you after a binge-full weekend. Chicken, broth, corn and scallions come together to melt into a tasty and wholesome soup to make you feel nourished.

Serves: 6

Container: you will need 6 freezer-safe, airtight containers

Time: approximately 30 minutes

Nutritional info per serving:

  • Calories: 230
  • Fat: 9 grams
  • Protein: 25 grams
  • Carbs: 12 grams

Ingredients:

  • 5 boneless chicken thighs, cut into small pieces
  • 1 onion, finely chopped
  • 4 cups (32fl oz.) chicken broth
  • 2 cups (16fl oz.) water
  • 1 can (14 oz.) corn kernels, drained
  • 2 scallions, finely sliced
  • Salt and pepper, to taste

Method:

  1. Place all ingredients into a pot and add a pinch of salt and pepper, place over a medium heat and cover.
  2. Leave to simmer for approximately 30 minutes until the chicken is cooked through.
  3. Leave to cool slightly before dividing into your 6 containers, cover and stack into the freezer to store until needed.
  4. Leave the frozen containers on the bench to thaw before thoroughly reheating, or simply place the frozen soup in a pot over a high heat to speed the process up!
