Steak and Zoodle Salad
“Zoodles” are noodles made from zucchinis. They’ve become rather popular over the last few years, as they have barely any calories but still resemble the look, texture and flavor-carrying abilities of noodles. Strips of steak, sprinkles of sesame seeds, and a lemony-olive oil dressing. Ideal for both dinner and lunch!

Container: you will need 4 airtight containers, or 1 large container
Time: approximately 25 minutes

Ingredients:
- 3 large zucchinis, cut into noodles with a spiralizer
- Saltand pepper, to taste
- Olive oil
- 2 sirloin steaks (or 1 really large one, use your judgment to figure out how much steak you’d like for each serving)
- Juice of one lemon mixed with 2 tbsp. olive oil
- 2 tbsp. sesame seeds
Method:
- Place the zucchini noodles into a microwave-safe bowl and cook in the microwave for 1 minute. Don’t overcook them, as you don’t want them to be slushy or mushy! Sprinkle with salt and pepper and set aside.
- Heat a small amount of olive oil in a non-stick frying pan and place over a high heat.
- Place your steak onto the hot frying pan and cook to your liking, place onto a board to rest. You can season the steak with salt and pepper at this stage.
- Keep the pan on the heat and add the sesame seeds to the pan and toast them in the leftover steak juices until golden and fragrant.
- Thinly slice your steak and add to the bowl of zoodles, add the sesame seeds and the olive oil and lemon dressing, stir to combine.
- Pack away into your container/s, cover and place into the fridge to store until needed!
- I love to eat this salad cold, right out of the fridge.
