Cold Tuna and Pasta Salad
There’s only a small amount of whole-meal pasta in this recipe, just enough to fill you up! Tuna, avocado, carrot, corn and bell peppers bulk-out the veggie quota for this yummy cold salad.

Time: approximately 30 minutes

Ingredients:
- 1 ½ cups whole-meal penne pasta (or any other shapes you have handy!)
- 2 cans tuna (the single-serve cans) drained
- 2 carrots, peeled and cut into small pieces
- ¾ cup corn kernels
- 1 avocado, flesh cut into chunks
- 1 red bell pepper, core and seeds removed, flesh cut into small pieces
- Salt and pepper, to taste
Method:
- Bring a pot of water to boil and add pinch of salt and the dry pasta, cook until the pasta is al dente (some pastas differ so use the instructions on your packet).
- Drain the pasta and leave to cool slightly before adding the tuna, carrots, corn, avocado, bell pepper, salt, pepper and a drizzle of olive oil.
- Divide the pasta salad between your 4 containers, cover and place into the fridge to store until needed.
- Serve cold!
