

(TABOULEH SALAD)
Ingredients:
1 cup Bulgur wheat
1 Cucumber, diced
20 Cherry tomatoes, diced
2 medium Onions, chopped
2 tablespoons Olive oil
4 tablespoons Lemon juice
1 bunch Parsley, chopped
2 tablespoons Tomato paste
1 teaspoon Salt
1 teaspoon Pepper
Directions:
1. Soak bulgur with 2 cups of hot water. Cover and leave for an hour till bulgur is soft and fluffy.
2. Drain off any excess water.
3. Add in the rest of the ingredients and mix well.
4. Serve immediately or chill in the refrigerator before serving.
