Lamb and Red Onion Skewers
These skewers have two core ingredients: lamb and red onion. You can make a big batch of these and add any salad to go with it.
Serves: 8 skewers (2 skewers per serving, so 4 servings)

Ingredients:
- 4 lamb leg steaks, cut into cubes
- 2 red onions, cut into 6 wedges each
- 2 tbsp. olive oil
- Salt and pepper, to taste
- 8 skewers
Method:
- Preheat the oven to 400 degrees Fahrenheit and line a baking tray with baking paper.
- Load the skewers by alternating lamb and onion until full (but leave an inch on either side of the skewers so you can pick them up easily).
- Rub the onion and lamb with olive oil and sprinkle with salt and pepper and place on the tray.
- Place the tray into the oven and bake for approximately 20 minutes, turning once, until the onions are cooked and beginning to turn golden, and the lamb is cooked but still pink inside.
- Leave the skewers to cool slightly before packing away into a large container, covering and storing in the fridge until needed.
