Gluten Freedom
Grains that are high in starch often lead to inflammations within the body. The more the refined
the grain is, the more potential there is for inflammation. Unbleached white flour is much more
inflammatory than even processed wheat flour. O n the other hand, gluten free foods such as
fresh vegetables and healthy types of fat can actually help to reduce inflammation. Patients who
suffer with arthritis, asthma, cardiovascular disease, and even allergies have all shown
improvement while on a gluten free diet.
Some health conditions have also shown improvement by eliminating gluten from the diet. For
example, multiple sclerosis, autism, and irritable bowel syndrome have all shown improvement
in people when they switch to a gluten-free diet.
Some people have sensitivities to gluten even if they don’t have celiac disease or an outright
allergy. You may feel bloated, gassy, or have problems with diarrhea and constipation if you eat
gluten. By eliminating gluten you can be free of these problems.
Athletes who depend on a diet that affords a high nutritional value often opt for a gluten-free diet
simply because gluten inhibits the body’s ability to absorb minerals. Gluten grains are not
properly digested making it very difficult for the body to gain any nutrition from these foods.
While you may believe you are eating a diet rich in key nutrients, iron, and calcium, gluten
grains that are eaten will actually block your body’s ability to absorb everything you need.
Here’s a reason to frown. Gluten contains a phosphorus mineral called phytate. Phytate acids
are linked to an increase in tooth decay because they block other minerals from being absorbed
which then cause bacteria to feed on starches in your mouth. This leads to gingivitis and tooth
